This is all about the "Turbo Chef" oven. I feel as if this oven takes all the skill out of cooking. As well as taking the skill and fun out of cooking, it doesn't even cook properly. Over cooking and under cooking, it it the equivalent of a microwave in my opinion. technology is moving to fast and crossing boundries. it makes me feel like the jetsons were right about food in pill form, and we are just not ready for that technology.
I agree with you Chris. Technology is overstepping its boundaries here. For people like you and me that have gone through the motions of a culinary education it's like it was all for nothing because there are ovens now that can theoretically do our jobs. With the Turbo Chef however I can see it being useful in certain aspects of the hospitality industry. It would be be great for something like a roach coach or even in quick Service. Any place where the level of education of the employees may be lower and a quick turnover rate is a necessity. I have seen similar ovens as well right here at Johnson & Wales. A few weeks ago I saw a private demo on one such oven. the things that it could do blew me away and also were kind of frustrating because one really only needs to learn how to push a button to get a job these days. The one thing about that demo that I thought was genius though was the internet jack that was built in. It keeps a complete record of everything that was cooked in it for a period of 10 days and all of the internal cooking temps of the food. That is really useful for sanitation purposes, no more temp logs. I conjunction with that it also had a USB port do that you can take all that information home with you. I just wish that I could remember the name of the particular oven that was demoed.
